When all ingredients in a product and the technique used to prepare it match kosher regulations, kosher certification bodies such as KWS grant kosher certificates. Certified Pareve informs customers that the product is dairy and meat-free. The Orthodox Union (O.U.) estimates that 80 percent of all kosher sales occur outside of the conventional Jewish market.
